Why these sakes?

We’ve come to learn and love this selection from our many years of working in the restaurant industry. Not only do we believe they pair well with our Pan-Asian dishes, we also think it’ll be well received in a cozy and welcoming atmosphere. A goal for us here at Saucy Oakland is to make premium sake accessible and approachable.

Category: Junmai (Junmaishu)

Junmai means: no added alcohol. It is also a category that represents pure rice goodness, usually carrying strong rice flavors. Although Junmai sakes can have various profiles, they tend to focus on balance and structure.

Description

“Mirror of Truth” is smooth, subtle, and has the natural sweetness of rice. The brewers main focus when making this sake was to retain the original rice flavors. They sourced especially soft water in order to achieve this.

Serving Recommendations

Some sakes are best enjoyed hot, cold (like most on our menu), and then there’s those that are best enjoyed warm; Junmai. Warm sake should be warmed and served at 120 degrees.

Okuden Kantsukuri is best enjoyed with comfort food like lightly fried appetizers, as well as marinated chicken or pork.
